WHere is an easy version of a drink featured on our latest menu. It's a party-sized premix which is loaded with the flavours associated with Christmas time, making it ideal for hosting a holiday party. Save the extra syrup you can use for morning drinks, desserts, or to mix more rounds of the drink.
Bikini Recipe
Serves 10 people
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Combine the listed ingredients into a pot, bring to a simmer, stirring so the sugar melts. Next, remove from the stove allowing it to reach room temperature fully. Pour into a sterilised bottle, cap it and store in the fridge, it can be stored for up to a month.
For the Batch Mix: Mix every liquid ingredients in a sizeable container, allow it to infuse for one hour, then strain best through cheesecloth, making it perfectly clear.
For serving: Measure 85ml of the batch mix into a mixing glass containing ice, and agitate carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, garnish with a few cranberries and finish with a brief mist with the mandarin essence over the top.
